  • So what is gluten anyway?

    Gluten is a pesky protein found in wheat, barley, rye, and the derivatives of these grains, including malt and brewer’s yeast. All on the naughty list at Daniella’s Dandies. Gluten can also be found in many other types of foods, even ones that would not be expected. Don’t worry, still on the naughty list over here!

  • What's the difference between celiac disease and gluten-free eating?

    Celiac disease is an autoimmune disease where the ingestion of gluten and gluten-containing foods leads to damage in the small intestine and other related health problems. Those with celiac disease receive this diagnosis under the guidance of a doctor or health care professional via, in part, a battery of testing. Some people may have non-celiac gluten sensitivity (sometimes referred to as gluten intolerance or gluten sensitivity). While others may simply feel their best while living a gluten-free lifestyle. For these individuals, this means testing proved to rule out celiac disease, but they still suffer after eating gluten. People in this category remain misunderstood as there is not, at present, conclusive or reliable testing for such intolerances or sensitivities. But at Daniella’s Dandies, we bake for everyone eating gluten-free — whether by way of a diagnosis or simply by choice.
